What to block or not in Mac OS 10.11.6 El Capitan

Hi all,

One of the main reasons why I use Little Snitch is to protect my privacy. 8)
I have noticed over the previous versions of Mac OS that there are more and more components that communicate with remote servers. :evil:
Now that I moved to El Capitan and that I see a lot even if iCloud is disabled, I would like to understand the role of each of them and block anything that is not strictly necessary.
I have the same question for MS Office 2016!
Can anyone help?

Dear Hummingdrone,
I've noticed that using a HOSTS file and LS at the same time negates the HOSTS file. Is there a way around this?
But reading your other posts you may have dropped LS for HANDS OFF now so never or don't have this issue to solve.
