In Leopard, you could use the new sandbox-feature to prevent certains apps from accessing certain files.

However, the sandbox is as-of-yet not very well documented and you'll need Terminal to use it.

Symantec has a Mac offering called "Norton Confidential" that apparently has a feature which is supposed to prevent local files from being modified.

When Peter Norton owned the company, it was a different story, but nowadays I stay far, far away from Symantec. Objective Development is where I place my faith.

I presume setting permissions with Get Info won't work for you? Are the processes running under your uid?
