Mac question: How can I forbid sending speech data to apple?

Hi there!
I'd like to use my MacBook Pro's dictation function (*not* Siri) - but only offline since I do not trust Apple at all. Could someone help me to at least hinder my MBP to send speech recognition data to Apple's server? What do I have to do in Little Snitch? I guess the process' name is "com.apple.SpeechRecognitionCore.speechrecognitiond" - but I don't know how to tell Little Snitch to cut it off the Internet...

I apologize for the information free post, but I think it's necessary to point out that if you distrust the maker of your operating system, you should re-examine your choice of operating system. I should also point out that Apple is the only major OS vendor that makes personal privacy a marketing point.

All that said, here's a small bit of technical information for you. Try installing Wireshark (https://www.wireshark.org) and watching the network traffic when you test out dictation. If you haven't used something like Wireshark before it will be a tough slog though.
