OK, lets see what's going on. First you select some file in Finder, then you press and hold Command-Space to get that file sent to LaunchBar via Instant Send. The Little Snitch rules file is protected against external modifications. If such a modification is detected, you will get a warning message, asking if you want to accept these external changes.

[...] It may be that because the volumes are mounted in a location other than just in /Volumes that LaunchBar has this problem, but we can't change that location to be /Volumes as that cause conflicts and various other issues, and really LaunchBar should be able to eject Espionage's volumes regardl...

Just drag your /Library/Webserver/Documents folder to the sidebar of LaunchBar's index window (which can be opened with Command-Option-I). This will create a new indexing rule that indexes the contents of that folder.
